We look forward to trying most offerings from the SMWS, especially their Caol ilas! This first fill bourbon cask Caol ila was no exception, and didn’t disappoint. The nose had peat smoke, sweet heather, forest fruits, burnt wood, and bourbon. The palate gave us charcoal, beach fires, heather, spices, pepper, bourbon, and smoky wood. The finish was long and lingering with more charcoal and beach fires combined with butterscotch, sulphur, and slight floral notes. It had the usual Caol ila light colour and a smooth oily texture. Letting this dram breathe brought out floral notes and bourbon on the nose, and adding a little water mellowed the dram while bringing out savoury notes and wild garlic on the finish.

This whisky is intense, smoky, robust, floral, and sweet. It doesn’t disappoint and has real complexity underneath the peat.

Sweet, salty, and smoky.

Aromas of honeyed port loin with lavender relish and mincemeat pie whilst the taste was that of broiled tuna steak. Water added port cutlet with maple chipotle glaze and what seemed like a never-ending peat smoke/salty finish

 Notes: 56.8% ABV – Hogshead Ex Bourbon (first fill). Distilled March 1997 and 248 bottles produced. Around £75 per bottle at time of tasting.

Sweet lavender and peat smoke

Palate:

Charcoal, beach fires, lavender, artificial sweetener, and bourbon

Finish:

Long, smoky, and floral

Brings our floral notes

Water:

Brings out sulphur, heather, savoury notes, and wild garlic

Overall comments:

Intense, smoky, robust, floral, and sweet – I love it!

Nose:

Peat, strawberries, heather, forest fruits, turnips

Palate:

Sharp, spicy and savoury, very robust

Finish:

Peat notes linger along with some butterscotch notes

Smooth and velvety

Air:

Not a lot

Water:

I added a few pipettes to get the palate just right

Overall comments:

I love an older Caol Ila, this has real complexity underneath the peat.

Nose:

Medicinal, musty, and peaty. Almost ash and burnt wood with bourbon on the end

Palate:

Pepper, orange peel, and smoky wood

Finish:

A very long matchstick nose that seemed to last a long time

Colour:

White wine

Texture:

Oily

Air:

Brings out bourbon notes on the nose

Water:

Not a lot on the nose but mellows the palate in a nice way

Overall comments:

A great Caol ila that doesn’t disappoint. Lots of wonderful Caol ila goodness!
