Well where do we start with this one! We are all massive ‘peat heads’ and love Kilchoman as a distillery. With that in mind we were really intrigued to try their first Sauternes cask release, and we weren’t disappointed! The nose has damp firewood, dark fruits, Christmas spices, leather, and reminded us of an old pub with an open fire. The peat carries through to the palate where we also got hints of sea salt, Turkish delight, cereal, and Cuban cigars. The finish seemed to be endless with sweet peat and spices coming through as it tailed off to a slightly dry end… The colour was strawberry blonde and the texture was dense and creamy. Letting this dram breathe for a while brings out floral notes and toffee on the nose, but in reality, it doesn’t change too much. We were split on whether to add water but a ‘dash’ sweetened the palate and brought out Chinese spices on the nose and palate.

All in all we absolutely loved this dram! It’s very distinctive and the peat and sauterne flavours take turns as the dominant notes. The only downside is that there wasn’t more made! It’s an absolutely fantastic dram and if you get the chance to try it grab it with both hands!

With the first storm of the winter about to hit Scotland it feels like the perfect time to announce some good news! The Club is now into its fourth year and we have something never seen before, a Kilchoman single malt fully matured in Sauternes casks!

The Kilchoman Club Release - Fourth Edition is exclusively available to members of the Club. Three fully matured Sauternes casks from January 2011 have been hand picked from the warehouse and bottled at cask strength – 60% ABV.  Just over 900 bottles of this unique release will be available and every bottle will be individually numbered and hand labelled.

Nose:

Light peat, Alcohol, an old pub with a roaring fire, and mulled wine.

Palate:

Peat, sweetness, cereal, and cigars.

Finish:

Long and malty and sweet with peat and spices coming through.

Colour:

Golden.

Texture:

Thick

Air:

Brings out floral notes on the nose.

Water:

Sweetens the palate and brings out floral notes on the nose. It also brings out Chinese spices on the palate and finish.

Overall comments:

Great and unusual offering from Kilchoman. Pity there wasn’t more made.

Nose:

Lagavulin-esque peat and dark fruit nose with undertones of cabbage, herbs and Christmas spices.

Palate:

Peanut butter, peach sorbet, blackcurrant cordial, organic tobacco, Turkish delight.

Finish:

Mouth-gripping, sweet and savoury aftertaste, lasts long and develops endlessly.

Colour:

Strawberry-blonde.

Texture:

Dense, syrupy mouthfeel, creamy.

Air:

Doesn’t do much.

Water:

Didn’t add any.

Overall comments:

This is a fascinating dram, very distinctive, the peat and sauterne flavours take turns as the dominant notes, the palate keeps on developing. Highly recommended.

Nose:

Damp fire wood, polished leather, and a metallic undertone.

Palate:

Firewood and sea salt.

Finish:

Long firewood dry finish.

Colour:

white wine

Texture:

Medium and creamy.

Air:

Brings out a little toffee on the nose.

Water:

I just put a dash in but it didn’t need it.

Overall comments:

A cracking offering from Kilchoman. Not for the non-peat lovers but it certainly get’s my vote!
